Here’s the thing: you can buy desserts pretty much anywhere, right? Even in tiny Rhode Island, there seems to be a bakery in every city and town. So why choose us?
TL;DR – skip ahead if you want but this is important information to help you understand what “gourmet cupcakes” actually means!
To understand why we’re different, you have to understand why we exist. It was 2012 and I found myself craving cupcakes. I went to the local bakery down the street and bought half a dozen cupcakes – chocolate, vanilla and red velvet…yawn. Nothing against these classic (but basic) flavors but part of me thought “fancy” pastries baked locally would taste, well, fancy. The very basic flavors coupled with the extremely sweet and cheap-tasting American buttercream left me feeling disappointed. I thought I would taste a symphony of gourmet flavors and textures! What I actually tasted was “sweet” and the flavor profile, I believe, consisted of “sugar” and “more sugar.”
It became my quest to find an actual gourmet cupcake and I was frustrated that the Food Network had convinced me otherwise. I almost resigned myself to the fact that I was trying to find something that didn’t exist until one day I had a little bit of an epiphany. I realized that since most local bakeries operate as storefronts, they bake big batches of cupcakes every day for customers to purchase. That means it’s the most practical and cost-effective to make huge batches of American buttercream (which is literally just butter and confectioner’s sugar) and ice everything in it.
That’s when my relationship with baking began and I spent hours upon countless hours developing recipes, taste testing, experimenting and researching. I learned a lot about flavor pairings, icing techniques, fillings, textures and realized that true gourmet cupcakes are possible!
All of my recipes were developed for the most deluxe flavor experience – I don’t make big batches of powdered sugar icing and slap it on all of my cakes! I realized that’s why so many cupcakes had left me disappointed in the past since most storefront bakeries use the fastest, cheapest and easiest-to-batch-produce icing on all of their cakes. That’s what leaves them all feeling a little commercially produced and one-dimensional in flavor. To this day I still hear people tell me they aren’t big fans of icing and that’s because they only know “icing” as the standard cloyingly sweet afterthought piled onto every cake product they’ve ever tried! Every single one of my cupcakes is paired with an icing that is specific for that cupcake recipe – I don’t top everything with generic vanilla and I do not use the same icing recipe for every cake! Some cakes need a fluffy marshmallow icing, some cake textures pair well with a rich and creamy Italian Meringue Buttercream – I’ve personally tried hundreds of different pairings to develop the recipes and flavor profiles I offer today.
